Short Recipe: Traditional Chicken Biryani with Mehran Rice
Ingredients:
2 cups Mehran Rice
500g chicken (cut into pieces)
1 cup yogurt
2 large onions (sliced)
2 large tomatoes (chopped)
1 tbsp ginger-garlic paste
2 tsp biryani masala
1/2 tsp turmeric powder
1/2 tsp red chili powder
4 cups water
1/4 cup cooking oil
Fresh coriander and mint leaves for garnish
Salt to taste
Instructions:
Wash Mehran Rice and soak for 30 minutes.
Heat oil in a pot, fry onions until golden, and set half aside for garnish.
Add ginger-garlic paste, chicken, and spices (turmeric, chili powder, biryani masala) to the pot. Cook until the chicken is tender.
Stir in tomatoes and yogurt, and cook until a thick gravy forms.
In a separate pot, boil 4 cups of water with salt and cook the soaked Mehran Rice until 70% done. Drain the water.
Layer the semi-cooked rice over the chicken mixture. Garnish with fried onions, coriander, and mint leaves.
Cover and cook on low heat for 15–20 minutes until the rice is fully cooked and aromatic.
Fluff the biryani gently and serve hot with raita or salad.
